Cookie Bites: Our Go-To Snack Food
These cookie bites are in constant demand around our house. From the 2-year-old on up to the adults, we don’t like to go long without them. With only FOUR healthy ingredients, I never mind throwing these together! They’re great for school lunches, after-school snacks, class parties, or anytime at all. They’re sweet enough for the kids to think they’re really getting a treat, but in reality, they’re packed with nutrition.
Ingredients
2 1/2 c old-fashioned oats
1 c peanut butter
1/2 c honey
1/2 c chocolate chips (I like to use the mini chocolate chips!)
Depending on which peanut butter you use, they may need a little help sticking together with a teaspoon of pure vanilla extract.
Directions
Mix all ingredients together, shape into balls, and you’re done! You can enjoy them right away or refrigerate and enjoy them chilled. We do both. I store them in an air-tight container in the fridge. I’ve read other versions of this recipe that include more ingredients. I adapted this particular recipe based on our nutritional preferences and the ingredients I usually have on hand. You also can add or take away based on your family’s needs! Enjoy!
