If you’re anything like me, finding a simple, real food dinner suggestion is like hitting the jackpot! If I add a new winning recipe to my repertoire each week, I feel like I’m doing a-okay at the whole “feeding my family” thing.
I’m going to set aside Sundays each week to share with you one new recipe my family has tried and loved that week. These are guaranteed to be:
- Real food (nothing out of a box)
- Real and simple ingredients
- Easy to make
- Tested and approved by me and my family
Here’s this week’s find:
Tuscan Garlic Chicken by Easy Family Recipes. Chicken, garlic, sun-dried tomatoes, spinach, artichokes, and cheese all in one dish thrown into the oven. Are you drooling yet? I was so excited to try this when I found it, and it did NOT disappoint! My chicken breasts were on the thicker side, so I butterflied them twice over. Also, I minced the artichokes so the texture wouldn’t stand out to my kids.
I served it with Garlic Smashed Potatoes from the same gal. (I am LOVING her site and her IG! So glad I came across her!) These were also delish. I used the olive oil left over from the jar of sun-dried tomatoes instead of regular olive oil on these and…I died and went to Tuscan heaven. My red potatoes were NOT baby, which she calls for, and I think they would have turned out crispier if they had been. I could have cooked them for longer (or turned on the broiler), but my people were starving so I just went with it. I WILL be trying them again to achieve that crispy texture she talks about in the recipe.
Lastly, I served sauteed green beans. I buy fresh green beans, shake them in a baggie with garlic powder and olive oil, and sauté them in olive oil. I love it when they’re blackened (so do my peeps), so I let them sit in the pan for a while before turning.
VERDICT:
Me: Heck yes! I will definitely be making this again. It was easy, delicious, and different. I love that it has veggies packed in. I paired a glass of Chardonnay with this meal and it was fab. Also – you could totally put this together earlier in the day or the night before to have it ready to throw in the oven at dinner time!
Hubs: Thumbs up!
11 & 7-Year-Olds: Approved. They ate all of it. My boys aren’t big on regular mashed potatoes (weirdos), but they liked these Garlic Smashed Potatoes! Honestly though, their favorite part of the meal was the green beans, because they love how I make them. Can’t complain about that!
2-Year-Old: Nope. He is apparently on an all-carb diet right now, and that doesn’t include potatoes (unless they’re french fries).
Leftovers: We had enough left over for 2 small portions. I froze the chicken with one serving of potatoes each in baggies for adult lunches this week!
